Powerhouse Pancakes

(green pancakes)

This is for 2 servings!

  • 2 cups of spinach **
  • 3 eggs
  • 2/3 cups of greek yogurt
  • 2/3 cups of rolled oats
  • 2 tsp peanut butter
  • 1 banana
  • Dash of cinnamon
Directions:

Blend all together and cook Be very careful when you flip them because they are more delicate than a regular pancake.

(I have found that if I make the batter the night before, or if I let it sit for a few minutes, it becomes thicker and easier to handle)

** I have been playing around with the vegetables and I have added zucchini to the blend.

*** for added protein, add a scoop of shakeology.


Banana Chocolate Chip Oatmeal Muffins

  • 2 cups old fashioned rolled oats grounded extremely fine
  • 2/3 cups milk of choice
  • 1/4 cup pure maple syrup
  • 3 tbsp oil of choice i used avocado oil
  • 1/4 cup low fat Greek yoghurt
  • 1/2 tsp cinnamon
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp pure vanilla extract
  • 1 egg
  • 2 mashed bananas
  • 1/4 cup- 1/2 cup chocolate chips (depending on your liking)
  • 1/4 cup - 1/2 cup nuts of your choice (depending on your liking)

Preheat oven to 320°F

Place silicone muffin pans into a cookie sheet for easier handling (I use the large muffin pans, makes 12 muffins)

Mix all ingredients together and pour into the muffin pans.

Bake at 320°F for about 30 minutes. Time will vary depending on the muffin pan that you use. I use these silicone muffin pans (https://amzn.to/3Xhhv3k)

These brownies did not last at all!

  • Chickpea banana brownies
  • 3/4 cups chickpea flour ( https://amzn.to/3V8RtfO )
  • 2 ripe medium bananas
  • 1⁄4 cup unsalted organic grass-fed butter large 2 eggs
  • 1⁄2 cup pure maple syrup ( https://amzn.to/3Vjpni4 )
  • 2 tsp pure vanilla extract
  • 1⁄3 cup unsweetened cocoa powder ( https://amzn.to/4bRQpnI )
  • 1⁄2 tsp baking powder, gluten-free
  • 1 pinch sea salt (or Himalayan salt)
  • 1⁄4 cup semisweet (or dark) chocolate chips ( I used dairy free chocolate chips)
  • Preheat oven to 350° F.
  • Line 9 x 9-inch baking pan with parchment paper. Set aside.
  • Place chickpea flour, mashed bananas, butter, eggs, maple syrup, extract, cocoa powder, baking powder, and salt in blender (or food processor); cover. Blend until smooth.
  • Add chocolate chips; mix by hand until blended.
  • Evenly spread batter into prepared pan.
  • Bake for 25 to 28 minutes, or until a toothpick inserted into the center of brownies comes out clean. Do not over bake.
  • Cut into sixteen squares. Enjoy it!

Motivation + whipped cottage cheese

Did you know that there is a magic number where you can officially say that you dislike a certain food?

I read that many years ago when I was trying to get my kids to eat their veggies!

“You can’t say you don’t like it until you have tried it at least 8 times”!

In many different occasions, I have tried to like cottage cheese, but no matter how I tried it, I just couldn’t! My whole family loved it! They put it on everything, and I just stared, closed my mouth shut and shook my head!

Even as an adult I tried. It’s such a great source of protein, but I couldn’t help it!

Well, you’ve probably seen all the hype around cottage cheese and the different ways to make it and so I was determined to try again!

I got myself a large container from Costco (because I do have 2 young adult boys that eat just about anything) and decided to give it another try!

I made stuffed chicken last week. I added spinach, mushrooms, cottage cheese, Parmesan cheese, a little bit of mozzarella cheese and a few seasonings. I even made a sauce with the cottage cheese and we all liked it!

Last night, I was going through Pinterest, like I do very often and I found out about whipped cottage cheese!!!


Perfect!!!!!

With the cinnamon pecan sourdough loaf that I made yesterday, this would be perfect for breakfast! The results…….. oh so yummy!

Moral of the story?!?!

Don’t give up!

If you fail, try again!

Change it up, tweak it, think outside the box, but try again! Don’t give up on something you know is good for you.

*Whipped cottage cheese is the simplest thing to do!

1 cup cottage cheese

A blender or an emulsifier or a food processor or a nutribullt, which is what I used.

Whip cottage cheese until it’s smooth.

I did not add anything to it at this point because later I can do whatever I want to it. I can add honey to make it nice and sweet on a piece of toast or I can spice it up and add herbs for a savory dip or sauce.
